Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Boil the lamb until tender and remove the bones.

  2. Prepare this a day in advance if possible.

Coat and bake

  1. Half an hour before serving, coat the lamb with egg and crumbs, and season with salt and pepper.

  2. Place the lamb in a well-greased paper bag, seal it, and bake in a very hot oven at 400°F (200°C) for 20 minutes.

Serve

  1. Serve with tomato sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Breast of lamb
Main protein; boiling softens its connective tissue so the meat becomes tender.
Egg
Acts as a binder so the crumbs stick evenly to the lamb.
Crumbs
Form a coating that browns and crisps in the hot oven.

The step that matters

Boil the lamb until tender. Connective tissue in breast of lamb only breaks down into soft gelatin after long simmering. If the meat is pulled too early, it stays chewy and the baked coating cannot make up for it.

Swap the tomato

How well each one fits the dish's main ingredients (lamb, egg, pepper, sauce):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Spinachfits better
  4. Tomatothe original

Fit is the average pairing score against lamb, egg, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
