What each ingredient does

Grouse
Provides the main flavour and the body of the smooth, pounded mixture.
Whipped cream
Adds air and richness, giving the set mixture a light, soft texture.
Aspic
Gelatine-based jelly that sets the mixture and gives a glossy finish.
Truffles
Add an earthy, aromatic note as a decorative finish.

The step that matters

Setting the mixture on ice. The mixture must be chilled until firm before it is turned out. Aspic sets through gelatine, which firms as it cools, so the shape holds only if the mold stays cold long enough.
