Feather Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Grease a cake pan well, place a sheet of white paper in the bottom, and grease it again.

  2. Sift flour, baking powder, and salt together three times.

Make the batter

  1. Cream the butter, then add the sugar and beaten eggs alternately, beating well.

  2. Add one-third of the flour mixture and one-third of the milk to the butter mixture and beat well.

  3. Add another third of the flour and milk, and beat again.

  4. Add the remaining flour and enough milk to make a soft drop batter.

  5. Stir in the vanilla and beat well.

Bake

  1. Pour the batter into the prepared pan and bake in a moderate oven at 350°F (175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with the sugar to give the cake fat-based richness and a tender crumb.
Eggs
Add structure and richness to the batter as they bind with the flour.
Flour
Forms the main structure of the cake once its starch sets during baking.
Baking powder
Releases gas during baking, helping the cake rise and become light.
Sugar
Adds sweetness and helps create a tender texture when creamed with butter.
Milk
Adds moisture and liquid that hydrates the flour to form the batter.

The step that matters

Adding the flour and milk in alternating portions. Adding flour and milk in thirds, beating between additions, keeps the batter smooth and well emulsified. Dumping everything in at once can leave lumps or an uneven, dense crumb.

Swap the vanilla

How well each one fits the dish's main ingredients (butter, milk, sugar, flour, egg):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against butter, milk, sugar, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
