Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mushrooms

  1. Cut the stems of the mushrooms close to the gills.

  2. Wash and dry the mushrooms.

  3. Place them in a pan, gill sides up, and pour melted butter over them.

  4. Dust with salt and pepper.

  5. Bake in a 400°F (200°C) oven for 20 minutes.

Prepare the toast

  1. Toast the bread until golden brown.

  2. Cover the toasted bread with hot milk, being careful not to soak it.

Assemble and serve

  1. Place the mushrooms on the toast, skin side up, and pour the pan juices over them.

  2. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Their moisture releases into the butter and pan juices, which soften and flavour the dish.
Butter
Carries seasoning and adds richness and browning as the mushrooms bake.
Bread
Forms the base that soaks up the milk and pan juices while holding its shape.
Milk
Forms a warm, creamy liquid that coats the toast and moistens it.

The step that matters

Covering the toast with milk without soaking it. Bread absorbs liquid quickly, so brief contact keeps the toast crisp enough to hold the mushrooms rather than turning soggy.
