To Dress Fish

Ingredients

Directions

Poach

  1. Wash and clean the fish thoroughly.

  2. Place firm fish (turbot, salmon, mackerel) in cold water.

  3. Place soft fish (plaice, haddocks) in boiling water.

  4. Keep the water skimmed while boiling.

  5. Cook until the fish easily leaves the bone.

Coat and fry

  1. Dry the fish with a clean cloth.

  2. Flour the fish or dip it in beaten egg.

  3. Coat the fish with bread crumbs.

  4. Ensure the frying pan is clean and the fat is hot enough to cover the fish.

  5. Fry the fish quickly until it is a fine light brown.

  6. For batter, mix ale and flour just before frying and dip the fish in it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms a dry coating that helps the fish and crumbs adhere and brown when fried.
Bread crumbs
Form a crisp, golden outer layer when fried in hot fat.
Ale
Adds liquid to the batter, giving a light coating that fries crisp.

The step that matters

Frying in hot fat. If the fat is not hot enough to cover the fish, the coating absorbs oil and turns greasy instead of crisp. Frying quickly in hot fat sets the crust before the fish dries out.

Swap the horseradish

The recipe marks horseradish as optional. How well each one fits the dish's main ingredients (fish, flour, bread):

  1. Shallotfits better
  2. Leekfits better
  3. Arrowrootfits better
  4. Horseradishthe original

Fit is the average pairing score against fish, flour, bread. Candidates are from the same food group and used in at least 100 recipes.
