Devonshire Squab Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cover the inside of a pie dish with a thin crust.

  3. Layer mutton chops rolled in salt and pepper at the bottom.

  4. Add a mixture of sliced onions and apples, then more chops alternately until the dish is filled.

  5. Pour water over the layers, cover the dish, and bake for two hours.
