Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the starchy outer shell that cooks into a firm, cohesive wrapping around the apple.
Apple
Provides the moist, tender filling that softens and sweetens as it cooks inside the rice.
Lisbon sugar
Sweetens the apple and draws out its juices, adding flavour to the filling.

The step that matters

Tying the cloth tightly. If the rice wrapping is loose or unevenly packed, it can break open or cook unevenly during boiling. A snug, even layer of rice holds its shape and keeps the apple moist inside.

Swap the clove

How well each one fits the dish's main ingredients (rice, apple, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerfits about as well
  4. Clovethe original

Fit is the average pairing score against rice, apple, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
