Stuffed and Baked Spanish Onions

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the onions

  1. Scoop out the centers of the onions.

  2. Parboil the onions for 3 minutes, then drain upside down on a cloth.

Stuff and bake

  1. Mix the bacon or sausage with the minced onion heart, bread crumbs, pepper, salt, mace, and cream.

  2. Stuff the onions with the mixture and place them in a baking dish.

  3. Simmer in the oven at 350°F (175°C) for 1 hour, basting often with melted butter.

Make the gravy and serve

  1. Carefully remove the onions and place them open ends up in a vegetable dish.

  2. For the gravy, add lemon juice, cream, and browned flour to the baking pan drippings, boil, and pour over the onions.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Form the edible shell that holds the stuffing and softens as it bakes.
Bacon or sausage
Adds fat and savory flavor that keeps the stuffing moist as it cooks.
Bread crumbs
Absorb liquid and give the stuffing body so it holds its shape.
Butter
Basting fat that adds richness and promotes gentle browning on the onions.
Browned flour
Thickens the pan drippings into a gravy with a toasty flavor.

The step that matters

Simmer in the oven for 1 hour, basting often. Onions need slow, moist heat so they soften through without drying out or scorching. Frequent basting with melted butter keeps the surface moist and encourages even browning while the stuffing cooks through.

Swap the mace

How well each one fits the dish's main ingredients (onion, butter, meat, bread, pepper, cream, lemon):

  1. Parsleyfits better
  2. Thymefits better
  3. Celeryfits better
  4. Macethe original

Fit is the average pairing score against onion, butter, meat, bread, pepper, cream, lemon. Candidates are from the same food group and used in at least 100 recipes.
