Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  2. Gradually add ½ cup sweet milk.

  3. In a separate bowl, mix 3 cups flour with 2 teaspoons baking powder.

  4. Add the flour mixture to the milk mixture a little at a time.

  5. Fold in the beaten egg whites.

Bake

  1. Pour the batter into prepared cake pans and bake at 350°F (175°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that sets the cake crumb as it bakes.
Butter
Creaming with sugar traps air and adds richness and tender texture.
Baking powder
Releases gas in the batter so the cake rises and becomes light.
Egg whites
Beaten stiff, they trap air that lifts the batter and keeps it light.
Granulated sugar
Sweetens the cake and helps create a tender, fine crumb when creamed.

The step that matters

Fold in the beaten egg whites. Folding gently keeps the air trapped in the stiff whites. Stirring or deflating them causes the batter to lose volume, leaving a denser cake.
