Chess Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the yolks of two eggs and the white of one egg.

  3. Stir in the sugar, butter, and chopped raisins until well mixed.

  4. Make a rich pie crust and place in tart pans.

  5. Use 1 tablespoon of the mixture for each crust.

  6. Beat the remaining egg white until stiff, then add sugar and flavoring.

  7. Spread the egg white mixture on top of the pies when they are partly done and let them brown lightly.
