Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Boil 1 cup of hot water and ½ cup of butter together.

  2. While boiling, stir in 1 cup of dry sifted flour.

  3. Remove from heat and stir until it forms a thin paste.

  4. Allow to cool, then stir in 3 eggs. Stir for 5 minutes.

Bake

  1. Drop tablespoonfuls onto a buttered baking sheet.

  2. Bake in a 400°F (200°C) oven for 25 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the starch paste that gives the puffs their structure as it sets.
Eggs
Add moisture and structure, helping the dough puff and set during baking.
Butter
Adds fat and richness, softening the paste and contributing to tenderness.

The step that matters

Stir in the eggs after cooling. If the paste is still hot, the eggs can scramble, and the dough may be too loose to hold its shape or puff properly.
