Petits Fours
Ingredients
Directions
Preheat your waffle iron over medium heat, turning it often.
Grease the iron with a little butter or white wax and wipe off excess.
Pour enough batter into the iron to cover it in one go, letting excess fall back into the bowl.
Close the iron and place it over the heat; listen for a hissing sound as it cooks.
Turn the iron to cook evenly, and check the doneness by opening it.
Remove any burnt batter from the edges with a knife.
When the waffle is golden yellow, detach it from the iron and roll it around a round stick.
Place it on a sheet of paper with the seam side down.
Continue cooking and rolling the next waffles, stacking them on a sieve.
For half waffles, cut the batter in half before rolling and separate them afterward.
If making many, add a little water to the batter if it thickens too much.
Store in a dry, warm place.
