Petits Fours

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare a baking sheet lined with parchment paper.

  2. Using a spoon, scoop the meringue mixture and shape it like an egg.

  3. Drop the meringue onto the parchment, giving a slight wrist flick to keep the top smooth.

  4. Sprinkle powdered sugar over the meringues and let it sit for a moment.

  5. Shake off excess sugar and place the meringues on a baking board.

  6. Bake in a cool oven at 300°F (150°C) until cooked.

  7. Once baked, hollow out the meringues and return them to the oven to dry, hollow side up, until they are light golden.
