Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the almond paste

  1. Grind the bitter almonds with the egg until fine.

  2. Mix in 6 ounces of sugar and the egg white until well combined.

  3. Leave the mixture in the mortar.

Shape and bake

  1. Prepare a firm royal icing with the remaining 6 ounces of sugar.

  2. Gently incorporate the almond mixture into the royal icing.

  3. Shape the mixture onto parchment paper.

  4. Bake in a slow oven at 300°F (150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bitter almonds
Provide the main flavour and the bulk of the almond mixture.
Sugar
Sweetens the mixture and helps bind it into a firm, shapeable paste.
Egg white
Adds moisture and helps bind the almond mixture together.

The step that matters

Gently incorporate the almond mixture into the royal icing. Folding gently keeps the icing's air and firm structure intact, so the mixture holds its shape instead of deflating or spreading when baked.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
