Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Dredge the beef roast lightly with flour and season with coarse sea salt and black pepper.

Roast

  1. Place the roast in the oven and baste frequently while roasting.

  2. Roast for 15 minutes per pound for rare, longer for well done.

Make the sauce and serve

  1. For the sauce, combine the drippings from the pan with Worcestershire sauce and tomato ketchup.

  2. Thicken the sauce with browned flour and serve in a gravy boat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef roast
Is the main cut of meat, cooked through by dry oven heat to the chosen doneness.
Flour for dredging
Forms a light coating on the surface that helps the outside brown.
Browned flour for thickening
Thickens the pan sauce so it coats the meat and holds together.
Worcestershire sauce
Adds savory, tangy flavor to the pan drippings sauce.
Tomato ketchup
Adds sweetness and acidity to the pan drippings sauce.

The step that matters

Roast for 15 minutes per pound. Internal doneness depends on the roast's weight and oven heat, and meat keeps cooking after it leaves the oven. Checking the internal temperature with a thermometer is more reliable than time alone, so pulling the roast a little early helps avoid overcooking.

Swap the tomato

How well each one fits the dish's main ingredients (beef, flour, pepper, sauce, ketchup):

  1. Capsicumfits better
  2. Horseradishfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against beef, flour, pepper, sauce, ketchup. Candidates are from the same food group and used in at least 100 recipes.
