Why it works: Beef and pork match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 5,690 recipes mention both. Both carry 12-methyltridecanal, which smells tallowy, beefy. The science ↓

Beef Ob Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the meatloaf

  1. In a large bowl, combine the ground beef, salt pork, crushed crackers, dissolved isinglass, butter, salt, pepper, cloves or nutmeg, and eggs. Mix well until all ingredients are thoroughly combined.

  2. Transfer the mixture to a loaf pan and bake for 1 hour.

  3. Let cool before slicing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef or veal
Provides the main body and rich meaty flavor of the loaf.
Eggs
Bind the mixture and set as it bakes, giving the loaf structure.
Boston crackers
Absorb moisture and help keep the loaf tender rather than dense.
Isinglass (gelatin)
Helps the loaf hold moisture and firm up as it cools for slicing.
Salt pork
Adds fat and moisture, keeping the meat juicy as it cooks.

The step that matters

Mix until thoroughly combined. Even distribution of the binders and fat matters; uneven mixing leaves pockets of dry or dense meat. Overworking the mixture, however, can make the meatloaf tough and compact, so mix just until combined.

Flavor stand-ins for the clove

How well each one fits the dish's main ingredients (beef, pork, gelatin, butter, pepper, egg):

  1. Parsleybetter flavor fit
  2. Tarragonbetter flavor fit
  3. Nutmegbetter flavor fit
  4. Clovethe original

Fit is the average pairing score against beef, pork, gelatin, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
