Chicken Salad

Ingredients

Directions

  1. Cut the white meat of cooked chicken into small bits, the size of peas.

  2. If desired, cut the dark meat of cooked chicken into small bits.

  3. Chop the celery nearly as small as the chicken.

  4. In a bowl, rub the yolks of hard boiled eggs smooth.

  5. Add mustard, coarse sea salt, oil, and vinegar to the egg yolks and mix well.

  6. Combine the chicken and celery in a large bowl.

  7. Pour the dressing over the chicken and celery mixture, adding a little cream.

  8. Serve immediately after adding the dressing.
