Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Small cucumbers
Provide the crisp, watery body that absorbs the vinegar brine and its flavor.
Vinegar
Provides the acidity that sours and preserves the cucumbers.
Alum
Helps keep the cucumber pieces firm and crisp during pickling.

The step that matters

Scald the cucumbers in the vinegar. Brief heat softens the cucumbers enough to take up the brine, but prolonged or excessive heating breaks down their structure and leaves them soft. Scald only until warmed through, then move them to fresh vinegar.

Swap the cucumber
