Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the bulk of the pickle and release juice that is drawn out by salting.
Coarse sea salt
Draws water out of the vegetables through osmosis, firming them for pickling.
Vinegar
Acidity that preserves the vegetables and gives the pickle its sharp flavour.
Sugar
Balances the sharpness of the vinegar with sweetness.
Mustard seed
Adds pungent, toasty flavour to the pickling liquid.

The step that matters

Draining after salting. Salt must pull enough water out of the vegetables; if they are not drained thoroughly, excess liquid dilutes the vinegar and the pickle turns watery and less stable.

Swap the tomato

How well each one fits the dish's main ingredients (onion, horseradish, pepper, vinegar, sugar, allspice, clove):

  1. Mustardfits better
