What each ingredient does

Green tomatoes
Form the bulk of the pickle and, once salted and cooked, give its firm, tender texture.
Onions
Add savory flavour and aroma that balances the sweet vinegar syrup.
Vinegar
Provides the acidity that preserves the pickles and gives them their sharp bite.
Brown sugar
Adds sweetness that offsets the sharpness of the vinegar.
Ground mustard
Contributes pungent, tangy flavour to the syrup.

The step that matters

Salting and draining the tomatoes and onions. Salt draws water out of the vegetables by osmosis, so the pickles stay crisp rather than watery. Rinsing and draining thoroughly after the overnight rest and the brief boil removes excess salt and moisture, so the syrup is not diluted and the pickles are not overly salty.

Swap the tomato

How well each one fits the dish's main ingredients (onion, vinegar, sugar, mustard, clove, ginger, cinnamon):
