Crab Apple Jelly and Jam

Ingredients

Directions

Prepare the apples

  1. Remove stems and blossoms from the crab apples.

  2. Scald the apples and pour off the first water.

  3. Place the apples in plenty of water and cook slowly until they begin to soften.

Make the jelly

  1. Dip off the juice for jelly, straining it through flannel.

  2. For jelly, use 1 pound of juice to 1 pound of granulated sugar.

Make the jam

  1. Add more water and let the apples stew until very soft.

  2. Strain the softened apples through a sieve to remove cores and seeds.

  3. To the remaining pulp, add 1 pound of brown sugar for every pound of pulp.

  4. Cook and stir carefully until thickened.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide the fruit flavor and natural pectin that helps the jelly and jam set.
Granulated sugar
Adds sweetness and helps the juice thicken into a firm jelly.
Brown sugar
Adds sweetness and a deeper, caramel-like flavor to the jam.

The step that matters

Cook and stir the jam until thickened. As water evaporates, the sugar and pulp concentrate and thicken. Sugar-rich mixtures scorch easily on the bottom of the pan, so constant careful stirring prevents burning and sticking.

Swap the apple
