Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Simmers into the broth, giving it body and a rich meaty flavor.
Celery
Provides the main flavor and aroma of the soup as it simmers.
Cream
Adds richness and a smooth, velvety texture to the finished soup.
Corn-starch
Thickens the soup slightly when it is boiled with the cream.

The step that matters

Stir in the cream mixed with corn-starch. Corn-starch must be mixed with the cream first so it disperses evenly; added dry it clumps. Starch thickens as it heats, so the soup needs a steady boil for the full 10 minutes.

Swap the celery

How well each one fits the dish's main ingredients (veal, cream, corn, pepper):

  1. Celerythe original
  2. Nutmegfits about as well
  3. Tarragonfits about as well
  4. Parsleyfits less well

Fit is the average pairing score against veal, cream, corn, pepper. Candidates are from the same food group and used in at least 100 recipes.
