Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbread
Main protein; its delicate, tender texture is the centre of the dish.
Butter
Fat that combines with browned flour to form the roux and carries flavour into the sauce.
Browned flour
Thickens the sauce and adds a toasted, nutty colour and flavour.
Bread crumbs
Form a crisp golden crust on the outside of the sweetbread when roasted.
Lemon juice
Adds acidity that brightens the rich, buttery sauce.
Curry powder
Adds warm spice aroma and flavour to the sauce.

The step that matters

Drying and roasting the coated sweetbread. Moisture left on the sweetbread keeps bread crumbs from adhering and steams the crust instead of browning it. Thorough drying before crumbing lets the surface crisp and turn golden in the oven.
