Why it works: Pepper and ginger match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 6,800 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

To Pickle Beet-root

Ingredients

Directions

Prepare the beet

  1. Wash the beet thoroughly without cutting off the fibrous roots.

  2. Boil the beet in sufficient water until the skin can be easily removed.

  3. Cool the beet on a cloth, then rub off the skin and cut it into thick slices.

Make the pickle

  1. In a separate pot, boil the vinegar with black pepper and dry ginger, then let it cool.

  2. Place the beet slices in a jar and pour the cooled vinegar mixture over them.

  3. Seal the jar tightly with a cork.

What each ingredient does

Beet-root
Forms the main body of the pickle and gives its colour and earthy flavour.
Vinegar
Provides the acidity that preserves and sharpens the pickled beet.
Black pepper
Adds a sharp, aromatic heat to the pickling liquid.
Dry ginger
Adds a warm, aromatic spice note to the pickling liquid.

The step that matters

Cool the vinegar mixture before pouring it over the beet. Pouring hot liquid over the beet slices would soften them and can cook them further, so letting the vinegar cool keeps the slices firm and crisp while they pickle.

Swap the ginger

How well each one fits the dish's main ingredients (vinegar, pepper):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits better
  4. Gingerthe original

Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
