Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the bulk of the ketchup and, once boiled down, the thick body of the sauce.
Cider vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.
Cinnamon
Contributes warm, aromatic spice flavour to the sauce.
Coarse sea salt
Seasons the sauce and adds savoury depth to the tomatoes.

The step that matters

Boil the strained tomatoes down. Tomatoes are mostly water, so they must reduce long enough to thicken into a concentrated base. Adding vinegar and spices too early or stopping early leaves the ketchup thin and watery.

Swap the mace

How well each one fits the dish's main ingredients (tomato, ginger, clove, cinnamon, mustard, pepper, cider):

  2. Cardamomfits better
