What each ingredient does

Crabs
The main ingredient, providing the sweet meat that forms the body of both dishes.
Milk
Gives the stew its creamy, moist body and mild sweetness.
Flour
Mixed with butter to thicken the stew into a smooth, richer consistency.
Bread crumbs
Absorb moisture and bind the crab meat into a firm, spoonable filling for the deviled crabs.
Butter
Adds fat and richness, carrying flavor and softening the texture of both dishes.

The step that matters

Boil the crabs until they turn bright red. Boiling until the shells turn bright red signals the crabs are cooked through. Undercooked crab meat stays translucent and clings to the shell, while overcooking toughens the protein and makes it dry and stringy.

Swap the parsley

How well each one fits the dish's main ingredients (crab, bread, butter, pepper, vinegar, milk, flour):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Cinnamonfits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against crab, bread, butter, pepper, vinegar, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
