Why it works: Potato and corn match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 938 recipes. Both carry (e)-2-octenal, which smells fatty, green. The science ↓

Yeast Bread

Ingredients

Directions

  1. Clean, peel, and boil about 3½ pounds of potatoes.

  2. Mash the potatoes carefully to remove all lumps or force through a potato ricer.

  3. Allow the mashed potatoes to cool until lukewarm.

  4. Make a sponge from the potatoes, corn syrup, salt, yeast softened in ½ cup of liquid, and 1½ cups of wheat flour.

  5. Set the sponge in a warm place to rise until light.

  6. Mix in the remaining wheat flour and ground rolled oats.

  7. Knead thoroughly until a smooth and stiff dough forms.

  8. Set the dough aside at 80°F to 86°F for about 2 hours or until it rises.
