What each ingredient does

Mutton
Supplies the meat, bones and connective tissue that give the broth its body and flavor.
Water
Extracts collagen and flavor from the mutton during the long simmer.
Onion
Adds sweetness and savory depth to the broth as it cooks.
Carrot
Adds mild sweetness and aromatic depth to the broth.

The step that matters

Long, gentle simmer. Collagen from the meat breaks down into gelatin over a long, low simmer, which is why the cooled broth sets to a jelly. Boiling hard can cloud the broth and emulsify fat into it, so keep the liquid barely bubbling and add water as it reduces.

Swap the onion

How well each one fits the dish's main ingredients (mutton, carrot, parsley):

  1. Turnipfits better
  2. Parsnipfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against mutton, carrot, parsley. Candidates are from the same food group and used in at least 100 recipes.
