Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Pare, boil, and mash the potatoes.

  2. Add butter, sugar, salt, egg yolk, warm milk, and yeast to the mashed potatoes.

  3. Dissolve baking soda in the mixture.

  4. Add flour gradually until a stiff batter forms.

  5. Let the batter rise until ready to shape into rolls.

Shape and bake

  1. Shape the rolls and place them in muffin pans.

  2. Bake in a preheated oven at 350°F (175°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add moisture and a soft, tender crumb to the dough.
Yeast
Produces gas that makes the dough rise and become light.
Flour
Provides the structure that holds the dough together as it rises and bakes.
Egg yolk
Adds richness and helps bind the dough for a tender texture.
Baking soda
Reacts with the dough's acidity to add some extra lift.

The step that matters

Let the batter rise until ready to shape into rolls.. Yeast needs time to produce gas and build structure; shaping too early gives dense rolls, while letting the dough over-proof can cause it to collapse and lose its structure.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter, sugar, milk, flour):

  1. Sweet potatofits about as well
  2. Leekfits about as well
  3. Arrowrootfits about as well
  4. Potatothe original

Fit is the average pairing score against egg, butter, sugar, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
