Scalloped Calf's Head

Ingredients

Directions

  1. Cook the calf's head, tongue, heart, and brains separately in just enough water to cover them, over low heat.

  2. Once nearly done, remove from heat and cut all the meat from the bones.

  3. Chop the meat and place it in a baking dish in alternate layers.

  4. Pour the cooking liquid over the layers and season with salt and pepper.

  5. When almost done baking, pour a generous glass of Madeira or sherry on top.

  6. Add layers of bread crumbs and butter between the meat layers, finishing with a layer of bread crumbs and butter.
