Directions

Cook the meat

  1. Boil the beef neck until tender and bones come out easily.

  2. Remove the beef, let it cool, and then shred it into pieces.

  3. Skim the grease from the cooking liquid and pour it into another vessel.

  4. Return the meat and liquid to the cleaned kettle.

Thicken and set

  1. Bring to a boil and thicken with sifted meal until it resembles mush.

  2. Cook while stirring constantly to prevent scorching.

  3. Season with salt, pepper, and sage.

  4. Pour into pans or crocks and let cool.

  5. Once cold, slice and fry until browned like sausage.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sifted meal
Thickens the cooking liquid into a mush that sets as it cools.
Piece of beef neck
Provides the shredded meat and rich flavor that form the body of the pudding.

The step that matters

Cook while stirring constantly. Thickened mixtures containing starch and meal settle on the bottom of the pot and scorch easily when heated, so constant stirring keeps the mush smooth and prevents burnt flavor.

Swap the sage

How well each one fits the dish's main ingredients (beef, pepper):

  1. Rosemaryfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Sagethe original

Fit is the average pairing score against beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
