Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and 27,047 recipes mention both. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Jellied Chicken

Ingredients

Directions

Cook the chicken

  1. Boil the chicken in minimal water until the meat falls from the bones.

  2. Shred the meat into small pieces and season with salt and pepper.

Assemble and set

  1. In a mold, layer slices of hard-boiled egg and lemon at the bottom.

  2. Add a layer of shredded chicken, then alternate layers of chicken and egg until the mold is full.

  3. Boil down the chicken stock until about 1 cup remains, seasoning it well.

  4. Pour the stock over the chicken layers; it will form a jelly as it cools.

  5. If needed, soak a little gelatin and add it to the stock for extra firmness.

The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

    Shared aroma: beta-pinene (pine, resin).

Egg and lemon share little aroma chemistry, yet 44,316 recipes mention both: they likely work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the meat for the layers and the collagen-rich stock that sets into jelly.
Hard-boiled eggs
Add firm, sliced layers that give structure and contrast to the shredded meat.
Gelatin
Adds extra setting power so the stock firms into a sliceable jelly.

The step that matters

Reducing the chicken stock. The stock must be concentrated enough to set firmly when cooled. Boiling it down to about 1 cup concentrates the natural gelatin from the chicken, so the jelly holds its shape. Seasoning it well matters because cold dulls flavor.
