Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the stuffing together so it holds its shape when browned.
Stale bread
Forms the bulk of the stuffing, absorbing moisture and giving it body.
Flour
Thickens the gravy so it coats the meat and liver rather than running thin.
Lard
Fat for browning the stuffing, adding richness and browned flavor.
Butter
Adds fat and flavor to the stuffing and to the brushing on the skin.

The step that matters

Cook until thoroughly done. A whole pig is thick and dense, so the center can stay undercooked while the outside browns. Cooking until the thickest parts reach full doneness is needed for safety, and the stuffing must also be fully heated through.

Swap the onion

How well each one fits the dish's main ingredients (bread, egg, butter, sugar, thyme, pepper, flour):

  1. Shallotfits better
  2. Leekfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against bread, egg, butter, sugar, thyme, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
