Why it works: Sugar and vanilla are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 35,032 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Vanilla Ice Cream

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the base

  1. Combine sugar, half of the cream, and the split vanilla bean in a saucepan.

  2. Bring to a boil over medium heat, stirring constantly for 10 minutes.

  3. Remove from heat, take out the vanilla bean, and scrape the seeds into the mixture with a blunt knife, ensuring no seeds are wasted.

  4. Mix the seeds thoroughly with the cream and let it cool.

Freeze

  1. Once cooled, add the remaining cream and freeze until firm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and richness, giving the ice cream a smooth, creamy texture.
Sugar
Sweetens the base and lowers the freezing point, keeping the ice cream softer and scoopable.
Vanilla bean
Supplies the flavor, with its seeds dispersed through the base for aroma.

The step that matters

Scraping the vanilla seeds into the hot mixture. Vanilla flavor comes from seeds and pod oils that are released best when scraped and mixed thoroughly into the warm cream. Leaving seeds behind or not dispersing them evenly gives uneven flavor.
