What each ingredient does

Strawberries
Provide the fruit, flavor and bulk that the preserve is built around.
Sugar
Sweetens and, in quantity, draws water out of the fruit to help preserve it.

The step that matters

Boiling until clear. Sugar must be dissolved and the mixture boiled long enough to thicken and set properly. If the mixture is still cloudy after the first boil, a further boil helps concentrate the sugar and clarify the syrup, as the method directs.
