What each ingredient does

Macaroni
Forms the bulk of the dish and soaks up the sauce as a starchy base.
Tomatoes
Provide the main body, acidity and liquid of the sauce.
Grated cheese
Melts into the layers, adding richness and savoury flavour.
Fat bacon
Renders fat and savoury flavour into the sauce as it simmers.
Butter
Adds fat and a smooth, rounded richness to the finished sauce.

The step that matters

Passing the sauce through a colander. Straining removes the solid pieces of onion, parsley and bacon so the sauce becomes smooth. Pressing too hard can force through bits that cloud the texture.

Swap the onion

How well each one fits the dish's main ingredients (tomato, parsley, butter, pepper, cheese):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits better
  4. Onionthe original
