Ingredients

Directions

Prepare the base

  1. Combine the heavy cream and sugar in a large bowl.

  2. If using a vanilla bean, split it and boil it in the milk.

  3. Remove the bean, scrape the seeds into the milk, and add the milk to the cream mixture.

  4. If using vanilla extract, add it to taste.

  5. Chill the mixture thoroughly before freezing.

Freeze

  1. Once the mixture is in the ice cream maker, beat the egg whites until stiff peaks form and add them when the freezing process begins, stirring to combine.

  2. Freeze according to your ice cream maker's instructions.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Provides fat and richness, giving the ice cream its smooth, creamy body.
White sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer and scoopable.
Milk
Adds moisture and dairy solids that balance the richness of the cream.
Egg whites
Whipped to stiff peaks, they add airiness and lightness to the frozen texture.

The step that matters

Chill the mixture thoroughly before freezing. A cold base freezes faster in the machine, forming smaller ice crystals and a smoother texture. A warm base freezes slowly and can turn grainy or icy.
