What each ingredient does

Barley
Thickens the broth as it cooks and gives the soup a hearty texture.
Mutton
Releases rich meat flavor into the broth during long, slow simmering.
Carrots
Add sweetness and body to the broth as they soften.
Turnips
Soften during simmering and add a mild, slightly peppery flavor to the broth.

The recipe marks tomato as optional. How well each one fits the dish's main ingredients (barley, onion, carrot, turnip, mutton, ham, pepper):

  1. Leekfits better
  2. Parsnipfits better
