What each ingredient does

Rice
Forms the body of the pudding as its starch thickens during boiling.
Milk
Provides liquid and moisture that the rice absorbs and softens in.
Eggs
Set when heated, helping the mixture thicken and hold together.
Butter
Adds richness and fat, giving a smoother mouthfeel.
Sugar
Adds sweetness and balances the flavor of the milk and eggs.

The step that matters

Boil the mixture for 2-3 minutes. Eggs thicken as their proteins set with heat, but overheating can curdle them into lumps. Hold the boil brief and keep the mixture moving so the pudding turns creamy rather than grainy.

Swap the raspberry

The recipe marks raspberry as optional. How well each one fits the dish's main ingredients (rice, milk, egg, butter, sugar, nutmeg, wine):

  1. Vanillafits better
  2. Figfits better
  3. Lemonfits better
  4. Raspberrythe original

Fit is the average pairing score against rice, milk, egg, butter, sugar, nutmeg, wine. Candidates are from the same food group and used in at least 100 recipes.
