What each ingredient does

Mushroom flaps
Provide the main flavour and liquid that is extracted and then concentrated into the ketchup.
Coarse sea salt
Draws moisture out of the mushrooms and seasons the liquid as it boils.
Garlic
Adds pungent aroma and savoury depth to the reduced liquid.
Cloves
Contributes warm, aromatic spice notes to the finished ketchup.

The step that matters

Boil until reduced to less than half the original quantity. Boiling concentrates the liquid, evaporating water so flavours intensify and the ketchup keeps longer. Stopping too early leaves it thin and more prone to spoiling.

Swap the clove

How well each one fits the dish's main ingredients (mushroom, garlic):

  1. Thymefits better
  2. Oreganofits better
  3. Cuminfits better
  4. Clovethe original

Fit is the average pairing score against mushroom, garlic. Candidates are from the same food group and used in at least 100 recipes.
