Why it works: Horseradish and mustard match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,832 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Ingredients
Directions
Place the melons in a pot and cover them with boiling salt water.
Cover the pot and let the melons sit overnight.
The next day, cut a slit from the stem to the blossom end and remove the seeds.
Return the seeds to the brine and let them soak for eight days.
After eight days, place the melons in strong vinegar for two weeks.
Wipe the insides of the melons with a soft cloth.
Stuff the melons and tie them closed.
Pack the melons in a pot with the slit side up.
Sprinkle some stuffing over each layer and cover with vinegar.
To make the stuffing, wash the ginger and soak it in boiling water for 24 hours.
Slice the ginger thin and dry it.
Combine the ginger, horseradish, mustard seed, onion, mace, nutmeg, turmeric, and black pepper into a paste with mustard and sweet oil.
Insert a clove of garlic into each mango.
