What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the soup.
Pearl sago
Thickens the soup as its starch swells and turns clear when cooked.
Butter
Adds richness and a smoother mouthfeel to the finished soup.

The step that matters

Cook the soaked sago slowly until clear. Sago starch needs gentle, sustained heat to swell fully and become translucent. Rushing it or boiling hard can leave it lumpy or gummy and uneven in texture.
