Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef bone
Releases flavour and gelatin into the water, giving the broth body and savoury depth.
Rice or barley
Absorbs liquid as it cooks, thickening the soup slightly and adding a starchy texture.

The step that matters

Boil the beef bone in 3 quarts of water for 3 hours. A long, steady simmer is needed to draw flavour and gelatin out of the bone. Boiling hard rather than simmering can make the broth cloudy and greasy.

Swap the cabbage

How well each one fits the dish's main ingredients (beef, onion, carrot, turnip, celery, rice, pepper):

  1. Leekfits better
  2. Parsnipfits better
  3. Okrafits better
  4. Cabbagethe original

Fit is the average pairing score against beef, onion, carrot, turnip, celery, rice, pepper. Candidates are from the same food group and used in at least 100 recipes.
