Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the salmon

  1. Drain the liquid from the can of salmon and break the fish into pieces.

  2. Mix in the melted butter, salt, pepper, eggs, bread crumbs, and a little milk.

  3. Transfer the mixture to a buttered bowl or a baking pan.

Bake and make the sauce

  1. Place the bowl in a pan of boiling water and bake in a hot oven at 400°F (200°C) for 1 hour.

  2. For the sauce, combine drawn butter, the liquid from the salmon can, a beaten egg, pepper, salt, chopped pickle, and minced parsley.

  3. Bring the sauce to a boil and pour it over the fish or serve it as gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and set it into a firm, sliceable loaf when baked.
Bread crumbs
Absorb liquid and give the loaf body and a soft, tender texture.
Melted butter
Adds fat for richness and moisture in the baked salmon.
Drawn butter
Forms the base of the sauce, adding richness and a smooth, flowing texture.

The step that matters

Baking in a water bath. Setting the bowl in boiling water moderates the heat around the mixture, so the egg proteins set gently without curdling or drying out. Rushing this with direct high heat can make the loaf tough or grainy.

Swap the parsley

How well each one fits the dish's main ingredients (salmon, butter, pepper, egg, bread, milk):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Capersfits less well
  4. Cinnamonfits less well

Fit is the average pairing score against salmon, butter, pepper, egg, bread, milk. Candidates are from the same food group and used in at least 100 recipes.
