Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the salmon mixture and help it set into a firm loaf when steamed.
Bread crumbs
Absorb liquid and add body so the loaf holds together and stays tender.
Corn starch
Thickens the milk into a smooth sauce as it heats.
Milk
Forms the base of the sauce, giving it a creamy texture once thickened.
Salmon
Provides the main protein and flavor, setting into the loaf as it cooks.

The step that matters

Adding the raw egg to the sauce. Raw egg can scramble or curdle if it meets very hot liquid too quickly. Adding it last, off the heat and mixing gently, keeps the sauce smooth.

Swap the parsley

How well each one fits the dish's main ingredients (salmon, egg, butter, bread, pepper, milk, corn):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Cinnamonfits about as well
  4. Dillfits less well

Fit is the average pairing score against salmon, egg, butter, bread, pepper, milk, corn. Candidates are from the same food group and used in at least 100 recipes.
