  2. Cook very slowly for 3 hours, adding a little water if needed.

  3. Fifty minutes before serving, add small potatoes, sprinkling a little salt on each.

  4. Turn each potato carefully as the lower side browns in the gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Slow cooking in liquid turns the tough cut tender and gives the meat rich flavor.
Flour
Dredging coats the meat and later thickens the pan liquid into gravy.
Potatoes
Starch absorbs the gravy and browns on the lower side, adding body and flavor.
Suet
Rendered fat browns the meat surface and carries flavor through the braise.

The step that matters

Cook very slowly for 3 hours. Low, gentle heat lets collagen in the tough cut break down into gelatin, so the meat turns tender instead of dry and stringy. Too much heat toughens the muscle fibers and can scorch the liquid.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, pepper, flour, potato, meat):

  1. Carrotfits about as well
  2. Chivefits about as well
  3. Capsicumfits about as well
  4. Onionthe original

Fit is the average pairing score against beef, pepper, flour, potato, meat. Candidates are from the same food group and used in at least 100 recipes.
