Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the tender meat wrapper that holds the dressing during slow cooking.
Roast chicken dressing
Adds savory filling and moisture inside each veal piece as it cooks.
Flour
Coats the veal so it browns in the pan and thickens the sauce.
Milk
Forms the liquid base of the sauce that braises the veal and softens it.

The step that matters

Fry the coated veal slowly until well browned. Slow frying over moderate heat browns the flour coating and meat through Maillard reactions, building flavor and color; rushing on high heat can scorch the flour before the veal is browned.
