Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Stuffed Onions

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the onions

  1. Parboil large onions in salted boiling water for 10 minutes.

  2. Cool and remove the centers of the onions.

Make the filling

  1. Mash the centers and mix with chopped cold meat, bread crumbs, and enough cream or melted butter to moisten.

  2. Season the mixture with salt and pepper.

  3. Fill the onion shells with the mixture.

Bake

  1. Place in a buttered shallow baking pan and bake at 350°F (175°C) until the onions are tender.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Large onions
Form the edible shells that hold the filling and soften during baking.
Stale soft bread crumbs
Absorb moisture and bind the filling so it holds its shape.
Cream or melted butter
Moistens the filling and adds richness so it does not dry out.
Cold meat
Provides the savoury body and bulk of the filling.

The step that matters

Parboiling the onions. Parboiling softens the onions enough to be hollowed without tearing and begins cooking them, so they become tender in the oven. Cooling before hollowing keeps the shells firm enough to handle.
