Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut a slice off the top of each tomato and remove most of the inside.

  2. Fill the tomatoes with a rich dressing.

  3. Replace the tops and place the tomatoes in a pan without water.

Roast and serve

  1. Roast in a 350°F (175°C) oven for 30 minutes or until done.

  2. Sprinkle sugar over the tomatoes and serve.

What each ingredient does

Large tomatoes
Form the vessel that holds the dressing and softens into tender flesh as they roast.
Rich dressing
Adds fat and flavor that moistens the tomatoes as they cook inside their shells.
Sugar
Adds sweetness that balances the tomatoes' acidity and helps them brown at the surface.
