What each ingredient does

Egg yolk
Emulsifies the oil and lemon juice, holding the sauce together as it thickens.
Olive oil
Supplies the fat that, dispersed in droplets, gives mayonnaise its rich body.
Lemon juice
Adds acidity that brightens the flavour and helps stabilise the emulsion.
Mustard
Acts as a secondary emulsifier that helps keep the oil and water phases blended.

The step that matters

Slowly add the olive oil while beating rapidly. Oil must be dispersed into tiny droplets before the emulsion forms. Adding it too fast overwhelms the yolk, so the sauce breaks into a greasy, separated liquid. Keeping the bowl cold helps the emulsion hold.
